Farm-to-Table Dining

Farm-to-table dining means eating food that goes from the farm or the garden to your plate with as few steps in between as possible. In Thailand there are several ways to eat like this: a Michelin-starred restaurant in Bangkok, a countryside restaurant near Chiang Mai, a restaurant in Phuket that uses produce from its own farm, or a cooking class on an organic farm outside Chiang Mai.

What farm-to-table means in Thailand

Thai cooking has always depended on fresh herbs, rice and vegetables. What is newer is a group of restaurants that build their menus around small farmers, regional produce and their own gardens and farms.

The MICHELIN Guide and the Green Star

The MICHELIN Guide Thailand 2026 was announced on 27 November 2025. Sorn and Sühring hold three stars, and Sorn was the first Thai restaurant in the world to receive three stars. In the same guide, 8 restaurants hold two stars and 33 hold one.

The guide also gives a MICHELIN Green Star to restaurants for their work on sustainability. In 2026, 5 restaurants in Thailand hold one:

  • Baan Tepa
  • GOAT (new in 2026)
  • Haoma (Bangkok)
  • Jampa (Phuket)
  • PRU (Phuket)

Some restaurants without a Green Star also cook with locally sourced ingredients, for example 100 Mahaseth in Bangkok.

How to recognise a real farm-to-table restaurant

  • The menu names the farms, the region or the producers.
  • The menu changes with the seasons.
  • The restaurant grows some of its own produce or runs its own farm.
  • The kitchen uses the whole animal or plant, for example in nose-to-tail cooking or fermentation.

100 Mahaseth

100 Mahaseth, at 100 Mahaseth Road in the Bang Rak district, cooks Isan (northeastern Thai) food nose to tail, which means using the whole animal, with locally sourced ingredients. Tips for planning your farm-to-table day

  • Check the closing days first. Most of these restaurants close one or two days a week (see the table above).
  • Book ahead. Small restaurants such as Blackitch have very few seats, so reserve before you travel.
  • Read the bill. "++" after a price means that a 10% service charge and 7% VAT will be added. "Net" means both are already included.
  • Ask about dietary needs when you book. Tell the restaurant or school about allergies, and carry a written note in Thai. Thai Farm Cooking School and Asia Scenic offer vegetarian, vegan and gluten-free menus.
  • Learn two phrases. "Mai phet" means "not spicy", and "mai sai ..." means "without ...".
  • Ask about hotel pickup for classes. Thai Farm Cooking School includes a minivan pickup. For other places, ask what transport is offered.
